Air Fryer Zucchini: Chips, Fries, and Rounds

Zucchini is one of the best vegetables for the air fryer. It cooks fast, takes on seasoning beautifully, and can be cut into chips, fries, or rounds depending on what you're craving. All three versions are ready in under 10 minutes.

Why Air Fry Zucchini?

  • Under 10 minutes for all three cut styles
  • Naturally low-carb — great for keto and low-calorie diets
  • No sogginess — the air fryer evaporates moisture for crispy results
  • Versatile — works as a snack, side dish, or salad topper

The biggest challenge with cooking zucchini is moisture — it's 95% water. The air fryer's circulating heat is perfect for driving out that water fast, leaving you with crispy, flavorful results instead of a soggy mess.

Recipe 1: Air Fryer Zucchini Chips

Thin, crispy, addictive. These rival store-bought veggie chips.

Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • ¼ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 egg, beaten

Instructions

  1. Slice zucchini into thin rounds (⅛ inch thick) using a mandoline or sharp knife
  2. Pat slices dry with paper towels — critical step
  3. Dip each slice in beaten egg, then press into the Parmesan-panko-garlic mixture
  4. Arrange in a single layer in the air fryer (work in batches)
  5. Air fry at 400°F for 8 minutes, flipping at 4 minutes
  6. They should be golden and crispy. Let cool 2 minutes — they crisp up more

Pro tip

The thinner you slice, the crispier the chips. A mandoline slicer is worth the investment.

Recipe 2: Air Fryer Zucchini Fries

A healthier swap for french fries that actually satisfies the craving.

Ingredients

  • 3 medium zucchini

  • 2 eggs, beaten
  • 1 cup panko breadcrumbs

  • ½ teaspoon salt
  • Cooking spray

Instructions

  1. Cut zucchini into sticks about 3 inches long and ½ inch thick
  2. Pat dry thoroughly
  3. Set up breading station: flour → egg → panko-Parmesan-Italian seasoning mix
  4. Bread each fry, pressing coating firmly
  5. Spray air fryer basket. Place fries in a single layer
  6. Air fry at 400°F for 10 minutes, flipping at 5 minutes
  7. Serve with marinara for dipping

Recipe 3: Simple Seasoned Rounds

The fastest option — no breading, just quick seasoned zucchini.

Ingredients

  • 2 medium zucchini

  • ¼ teaspoon smoked paprika

Instructions

  1. Cut zucchini into ½-inch rounds
  2. Toss with oil and all seasonings
  3. Spread in a single layer in the air fryer
  4. Air fry at 400°F for 8 minutes, shaking at 4 minutes
  5. Serve immediately

Perfect for meal prep bowls and quick sides.

Cooking Variations

Spicy Ranch Zucchini

Add 1 tablespoon ranch seasoning and ½ teaspoon cayenne to any of the recipes above.

Mediterranean Zucchini

Season rounds with za'atar, olive oil, and lemon juice. Top with crumbled feta after cooking.

Cajun Zucchini

Use 1 tablespoon Cajun seasoning instead of the basic spice blend. Serve with remoulade dipping sauce.

Storage and Reheating

Zucchini chips and fries are best eaten fresh — the breading loses crispiness overnight. Seasoned rounds store better and reheat well at 375°F for 2-3 minutes. For make-ahead meal prep tips, see our Meal Prep Guide.

FAQ

How do you keep zucchini from getting soggy in the air fryer?

The #1 trick is patting the zucchini slices bone-dry with paper towels before seasoning or breading. Zucchini is 95% water, so removing surface moisture is essential. Also avoid overcrowding — space between pieces lets steam escape.

Can you air fry zucchini without breading?

Absolutely. Simple seasoned rounds (recipe 3 above) use just oil and spices. They get slightly charred and caramelized, with a tender-crisp texture. It's the quickest and lowest-calorie option.

What temperature is best for air fryer zucchini?

400°F works for all three cut styles. The high heat is important because it evaporates moisture quickly, which prevents sogginess. Lower temperatures cause the zucchini to steam instead of crisp.
