Air Fryer Mini Pizzas (English Muffins, Tortillas, or Naan)

Mini pizzas in the air fryer are one of the fastest, most satisfying snacks you can make. The cheese gets properly melted with bubbly edges, the base gets toasty and slightly crispy underneath, and the whole thing is done in 5-7 minutes. No pizza stone, no preheating a full oven, no waiting 20 minutes.

This recipe works with three different bases — English muffins, flour tortillas, and mini naan — each with slightly different results. We'll cover all three.


The Three Bases: What to Expect

English Muffins

The classic mini pizza base. English muffins have a slightly chewy interior and get crispy around the edges. Split them and lightly toast them in the air fryer before adding toppings (30 seconds at 375°F is enough) — this prevents the interior from getting soggy when you add sauce.

Best for: Classic pizza flavors, traditional pizza night feeling

Flour Tortillas

Tortilla pizzas come out thinner and crispier than English muffin pizzas — closer to a cracker or flatbread pizza. They're lighter and more like a thin-crust pizza. Don't overload the toppings or the tortilla won't support them.

Best for: Light toppings, appetizer-style mini pizzas, lower-carb option

Mini Naan

The premium option. Mini naan has more flavor than English muffins and more structure than tortillas. It gets beautifully golden and slightly blistered on the bottom, similar to a restaurant pizza. No pre-toasting needed.

Best for: More complex toppings, when you want the most flavorful result


Basic Recipe

Ingredients (makes 4 mini pizzas)

  • 4 English muffin halves, small flour tortillas, or mini naan
  • 1/2 cup pizza sauce (or marinara, pesto, or alfredo)
  • 1 cup shredded mozzarella (or a blend of mozzarella and provolone)
  • Your choice of toppings (see variations below)
  • Olive oil spray
  • Dried oregano and red pepper flakes for finishing

Instructions

Step 1: Prep the base.

  • English muffins: Split and lay cut-side-up. Optional: air fry at 375°F for 1 minute before adding toppings to crisp the cut side slightly.
  • Flour tortillas: Use as-is. They don't need any pre-treatment.
  • Mini naan: Use as-is.

Step 2: Add sauce. Spread 1-2 tablespoons of sauce on each base, leaving a 1/4-inch border around the edge. Don't over-sauce — too much sauce makes the base soggy and causes the cheese to slide around.

Step 3: Add cheese. Sprinkle shredded mozzarella evenly over the sauce. Use enough to cover but not so much it overflows — about 1/4 cup per mini pizza.

Step 4: Add toppings. Add any additional toppings on top of the cheese. Keep toppings thin — mini pizzas don't have the surface area to handle heavy piles of ingredients.

Step 5: Air fry. Preheat air fryer to 370°F for 3 minutes.

Place mini pizzas in the basket in a single layer. Depending on your air fryer size, you may need to cook in batches.

Cook at 370°F for 5-7 minutes until the cheese is fully melted, bubbly, and starting to get golden spots. The base should feel firm and slightly crispy when you lift an edge.

Step 6: Finish and serve. Let cool for 1-2 minutes — the cheese is very hot. Sprinkle with dried oregano, a pinch of red pepper flakes, and a light drizzle of olive oil if desired. Serve immediately.

Mini Pizza Topping Ideas

Classic Margherita

Sauce, mozzarella, and fresh basil added after cooking. Finish with a drizzle of olive oil.

Pepperoni

Sauce, mozzarella, and 4-5 pepperoni slices per pizza. The pepperoni edges will curl and crisp slightly in the air fryer — this is normal and delicious.

BBQ Chicken

Swap pizza sauce for BBQ sauce. Top with shredded rotisserie chicken, mozzarella, and sliced red onion. After cooking, drizzle with a little extra BBQ sauce and top with fresh cilantro.

White Pizza (No Sauce)

Skip the tomato sauce. Brush the base with olive oil and garlic. Top with mozzarella, ricotta dollops, and fresh spinach. Finish with a pinch of lemon zest after cooking.

Buffalo Chicken

Buffalo sauce base, shredded chicken, mozzarella. Drizzle ranch dressing after cooking.

Mushroom and Spinach

Sauce, mozzarella, sliced mushrooms, baby spinach, and a sprinkle of parmesan. The mushrooms will slightly dry and concentrate in flavor.

Kid Toppings Bar

Set out bowls of: diced bell peppers, corn, olives, mini pepperoni, mushrooms, and different cheeses. Let kids build their own pizzas before you run them through the air fryer. This is one of the most reliably successful family activities with an air fryer.


For a Party Appetizer Spread

Mini pizzas are excellent for parties because they're fast, customizable, and self-contained (no plates required if you use small bases). Here's how to run them efficiently:

  1. Pre-sauce all the bases in advance and refrigerate
  2. Keep toppings in separate bowls
  3. Let guests choose their toppings, then assemble and cook in batches of 4
  4. Each batch takes about 6 minutes — steady output for a crowd

Tips for Better Mini Pizzas

Don't skip the preheat: A cold basket results in the base not crisping properly. Preheat for 3 minutes minimum.

Keep the sauce layer thin: This is the most common mistake. More sauce feels generous, but it makes the base soggy and prevents the cheese from adhering properly. 1-2 tablespoons is enough.

Shred your own mozzarella: Pre-shredded mozzarella contains anti-caking agents (usually potato starch or cellulose) that inhibit melting. Block mozzarella shredded at home melts dramatically better. For quick weeknight pizzas, pre-shredded is fine — but for a party, take the 5 extra minutes to shred your own.

Fresh herbs after, not before: Basil and other fresh herbs wilt and lose their brightness in the air fryer heat. Add them after cooking, not before.

Watch flour tortilla pizzas closely: Tortillas crisp faster than the other bases and can go from done to burnt in under a minute. Check at 4 minutes and pull them when the cheese looks done, not when the base looks done (the base will continue crisping briefly after removal).

Frequently Asked Questions

Can I use pizza dough instead of English muffins or tortillas? Yes, but it requires more effort. Roll or press pizza dough into small rounds (about 4 inches), pre-cook at 375°F for 2-3 minutes to set the dough, then add toppings and cook for another 4-5 minutes. It's a more involved process, and for a truly great result you're better off using proper mini naan, which has a similar texture.

Why is the center of my English muffin pizza soggy? Too much sauce, or the English muffin wasn't pre-toasted. English muffins have a very porous interior that absorbs sauce quickly. Either spread sauce very sparingly, pre-toast the muffin before adding toppings, or use a thicker sauce (simmer jarred marinara for a few minutes to reduce it).

Can I make these ahead of time and reheat? They're best fresh, but yes — you can reheat leftovers at 350°F for 3-4 minutes and they'll come back nicely. The base re-crisps and the cheese remelts. Avoid the microwave, which makes everything soft and rubbery.

What's the best cheese for melting? Low-moisture mozzarella is the classic choice and melts best. Provolone melts well and has more flavor. A 50/50 mix of mozzarella and provolone is a good upgrade. For something different, try a mix of mozzarella and smoked gouda — it adds a subtle smokiness. Avoid hard cheeses like parmesan as a primary cheese; they don't melt the same way, but they're great as a finishing sprinkle.
